After switching his major to Agricultural Operations Management, he had a renewed focus, achieved a 4.0 GPA, and discovered his true calling: fish farming.
Intrigued by his professor, Dr. Chapman, he visited his lab, where he was introduced to the world of sturgeon—a moment that sparked deep interest in this remarkable species. This passion led Christian to pursue a master's degree in Interdisciplinary Ecology at the University of Florida, under Dr. Chapman's guidance. Christian wrote his thesis, a foundation for future endeavors.
After gaining valuable experience working at two other sturgeon facilities, Christian felt prepared to take the next step. Florida Caviar was born as a family-operated venture, driven by a commitment to sustainable fish farming and the production of high-quality caviar. Our operation is a testament to years of dedication, learning, and a passion for bringing the best of Florida's aquaculture to the world.
