About Us

Florida Caviar began as a personal journey of discovery and passion for fish farming. After switching majors to Agricultural Operations Management in college and excelling academically, Christian met his mentor, Dr. Chapman, who introduced him to sturgeon. This sparked Christian's interest and led to a master’s degree in Interdisciplinary Ecology at the University of Florida, where he wrote and published a thesis on sturgeon. With hands-on experience from working at two sturgeon facilities, Christian founded Florida Caviar as a family-operated venture, focused on sustainable fish farming and producing high-quality caviar.
